Mushroom, Broccoli, and Cheese Stuffed Chicken

with garlic cream sauce

Filling:

3 g of mushrooms (about 3) 2 g

4 cloves minced garlic 0 g

1 tbsp parsley 0 g

Chicken:

2 chicken breasts 0 g

1/2 c. cooked broccoli 3 g

1 tbsp onion powder 0 g

1 tbsp parsley 0 g

1/2 c. shredded mozzarella 2 g


Cream Sauce:

1 tbsp olive oil 0 g

2 cloves minced garlic 0 g

1 tbsp dijon mustard 0 g

1/2 c. heavy cream 3.5 g

1 tbsp parsley 0 g

Salt and Pepper to taste 0 g


Directions:

Preheat the oven to 400º. Line a baking sheet with tinfoil.


Start by making the filling. Chop the mushrooms into small pieces. Melt the butter in a sauce pan on medium heat, then add the minced garlic. Cook until garlic becomes fragrant, stirring occasionally (about 1 minute). Add in the mushrooms, salt, pepper, and parsley. Cook while stirring until the mushrooms are soft. Set aside to cool.


Next, you will make the cream sauce. In the same skillet as before, heat the olive oil on medium heat, then add the garlic. Once again, sauté the garlic until it become fragrant. Next, add the dijon mustard, parsley, salt, and pepper. Stir until combined. Add the heavy cream and stir until there are no clumps. Turn heat to medium low. Let this cook as it bubbles softly for about a 5 minutes. In the meantime, prepare your chicken.


Butterfly the chicken breasts. Divide the mushroom filling evenly between the two breasts, as well as the broccoli. Spoon the filling and broccoli on the inside of the chicken breasts, then top with the mozzarella cheese. Close the chicken breasts, and season each with the onion powder and parsley. Pour the cream sauce on each breast, leave about 1/3 of it for after it's done baking.

Bake the chicken for 20-25 minutes.


Once the chicken is done, top with the remaining cream sauce before serving.



Notes:

We served this with sautéed garlic and zucchini. A medium zucchini is about 7 g of carbs, so this brought the meal total to 8.8 g of carbs person.
