Chicken, Garlic, Basil Zoodles

3 medium zucchini 18 g
2 chicken breasts 0 g
1.5 c. asparagus, chopped (1/2 bunch) 7.5 g
1 tbsp onion powder 0 g
4 cloves minced garlic 0 g
4 tbsp basil 0 g
1/4 c. olive oil 0 g
1 tsp salt 0 g
1 tbsp pepper 0 g
1/2 c. parmesan cheese 2 g
Directions:
Cube chicken breasts. In a large skillet, pour in some olive oil, then cook the chicken on medium heat.
In the meantime, chop the asparagus and spiralize the zucchini. Set aside.
When the chicken is cooked, drain the excess juice from the pan. Add the rest of the olive oil. Add the garlic, basil, onion powder, salt, pepper, and chopped asparagus to the chicken. Stir until combined, then cover. Cook on medium low heat for about 3 minutes.
Add the zoodles and stir to the zoodles get coated well with the spices and olive oil. Cover again, and cook for about 3 minutes. Finally, add the parmesan cheese, stir, then cover for a few minutes. Stir again once the cheese is more melted. The pasta should become more creamy. When it is, you are ready to serve!
Notes:
I used basil that is already chopped and combined with olive oil in this recipe. I comes in a tube and is very handy to keep on hand for quick dinners.
Broccoli would be a good substitution for asparagus in this dish.
