Meatloaf

Ingredients: Carbs:
1.5 lbs ground beef 0 g
1/2 c. pork rinds, crushed 0 g
1 shallot (~72 g) 12 g
2 eggs 1.2 g
1 tbsp Worcestershire sauce 3.3 g
1.5 tsp chili powder 0 g
1.5 tsp ground mustard seed 0 g
2 tsp minced garlic 0 g
1 tbsp black pepper 0 g
Directions:
Preheat the oven to 375º.
Chop the shallots, crush the pork rinds, then combine all ingredients in a bowl until well mixed.
Place in a loaf pan and bake for 50 min. The longer you bake it, the firmer the meatloaf will be. Drain the excess juice, then bake for an additional 10 min or so. Let sit 1-2 minutes before cutting and serving.
Notes:
We didn't include this above, but this would be good served with gravy or topped with sriracha.
