Smoked Salmon Salad

Ingredients: Carbs:
2 oz. smoked salmon 2 g
1/4 c. shredded parmesan cheese 1 g
12 olives, halved 3 g
1/4 c. sliced cucumber 1 g
2 c. lettuce 2 g
1 tbsp scallions 1 g
1/8 c. pecans, chopped 2 g
1/2 tsp dill, or to taste 0 g
Dressing:
2 tsp lemon juice 0 g
2 tbsp apple cider vinegar 0 g
1 tsp minced garlic 0 g
2 tbsp olive oil 0 g
Directions:
Cut the olives in half, slice the cucumbers, chop the scallions, and break the smoked salmon into pieces. Combine everything.
For the dressing, combine all ingredients and shake well. Pour over the salad, and enjoy!
Notes:
We used Kalamata olives in this recipe, but green olives would probably be better.
