Peanut Butter Cookies

4 tbsp peanut butter 10 g
1 egg 0.6 g
6 tbsp almond flour 18 g
1 tbsp butter, melted 0 g
1 tsp baking powder 0 g
1 tsp almond extract 0 g
1/2 tsp cinnamon 0 g
2 shakes of powdered stevia 0 g
Pinch of salt 0 g
1 tbsp cocoa nibs 2 g
Directions:
Preheat the oven to 350º. Spray a cookie sheet with non-stick spray. Combine peanut butter, melted butter, egg, and almond extract in a mixing bowl. Add almond flour, baking powder, cinnamon, stevia, and salt. Some people mix the the dry ingredients in a separate bowl first, but I put them all in the same bowl at one time and it turns out well. You should have a dough-like consistency for the most part, but it will be a little stickier than you might be used to.
Form one inch balls and place on the cookie sheet.
Bake for 8-9 minutes. When I check them, I usually flatten them with a fork.
When they are done, take them out and sprinkle a few cocoa nibs on top.
Notes: We have made this recipe both by blending our own almonds to make flour and by using store bought almond flour. Both turn out well, but the store bought flour makes slightly chewier cookies.
