Serving Size: 3/4 c of dessert - 1.9 g of carbs
Prep Time: 7 min
Freeze Time: 20 - 30 min
Total Time: 27 - 37 min
Ingredients: Carbs:
1/4 c. heavy cream 0.9 g
2 oz cream cheese 1 g
1 tsp lemon juice 0 g
Lemon zest (1/2 a lemon) 0 g
1/2 tsp vanilla 0 g
1 lemon slice 0 g
Stevia to taste 0 g
Directions:
In a small mixing bowl, whip the cream until fluffy. Set aside.
In a separate bowl, whip the cream cheese until it moves easily and is fluffy. Add the vanilla, lemon zest, lemon juice, and stevia (one shake is usually enough). Mix until combined.
Fold in the whipped cream to the cream cheese mixture until just combined. Transfer to a small bowl and place in freezer. Freeze for 20 - 30 minutes, or until firm.
Before serving, remove from freezer for about 10 minutes. Add the lemon slice and more lemon zest if desired.
Notes:
This is easier to eat when it's a little softer, so plan time for that.
This dessert is much better with the lemon slice.
Lemon extract might be a good substitute if you want more lemon flavor. If you add too much lemon juice, the consistency of the dessert will get too thin.
