We had a hard time finding sugar free jerky that wasn't super expensive, so we made our own. This can make about 100 strips of jerky for about $35.
Beef Jerky
Total Yield: ~100 pieces of jerky (~575 g) - 5 g of carbs

Prep Time: 45 min - 4 hours
Cook Time: 6 - 8 hours

Ingredients: Carbs:
5 lbs beef* 0 g
1.5 c. whiskey 0 g
5 tbsp soy sauce 5 g
3 tbsp Worcestershire sauce 0 g
3/4 c. apple cider vinegar 0 g
2 tsp liquid hickory smoke 0 g
Directions:
Mix all ingredients except the beef in a ziplock gallon bag.
Cut the beef into 1/8" - 1/4" strips. Try to be consistent with thickness. It helps if the meat is partially frozen when cutting. I usually will cut the meat in half and freeze half of it while I cut the other part. It really helps if you sharpen your knives first. This will take about 30 minutes. Place the strips in the marinade and place the bag in the refrigerator for at least 4 hours or overnight.
When your meat is all marinaded, pat dry each piece with a paper towel as you spread it out. You can dry the jerky in a couple of different ways. You could use a dehydrator or your oven. I have not tried a dehydrator, but you could check out the website noted at the bottom for timing on that.
In the oven, you can hang each strip on a toothpick like the picture shows, or you can lay them flat on the racks in the oven like the second picture shows. For both oven methods, place tinfoil at the bottom of your oven to catch any drips as the meat dries.
Heat the oven at 160º or the lowest temperature your oven with go. Stick a wooden spoon in the door of the oven to prop it open a little and get some airflow. If you have a convection oven, you can skip the wooden spoon. Bake for 6-8 hours (until your meat is dry and slightly tough). This timing completely depends on the thickness of your jerky, how wet it is when you hang it, the temperature of your oven, and how much airflow is in your oven. When it's done, it should be stored in the refrigerator or the freezer. I usually put it in smaller packs and keep one in the fridge and the others in the freezer.
